Danica's Chicken & Wild Rice Soup

1 Onion chopped
1 Cup Celery chopped
1 Cup shredded carrots
1 Quart Chicken broth
1 Pound Chicken - cooked/shredded (1 rotisserie chicken)
1 Box Rice A Rone Wild Rice
1 Can Cream of Chicken Soup
1 8oz can Evaporated Milk

Add onion, celery, and carrots into a pot on the stove.  Cover with 3 cups of broth.  Bring to a slow boil on medium heat.  Add in the chicken.  Let simmer until veggies are soft, about 15 minutes.
Add box of rice a roni and seasonings to the pot.  Let simmer 15 more minutes.
Add cream of chicken soup and evaporated milk.  Add in the remaining broth if needed as per your consistency.  If you want it more soupy or more creamy.  Let it simmer until ready to serve.

Serves 6.  Double for a large soup.
