Barbacoa Beef in the Insta Pot

Follow this recipe, except add almost double the amount of meat that it calls for.

Barbacoa Recipe

Use the Beef Stew setting but add 5 minutes.

Slow Cooker Chicken Noodle Soup

8 cups water or chicken broth
1 cup carrots (I use shredded)
1 cup celery chopped
1 cup onion chopped
1 clove garlic
2 bay leaves
1/2 tsp dried thyme
1-3 tsp salt to taste (I like less salt)
1/2 tsp ground pepper
3 1/2 pounds chicken (the recipe called for a whole chicken, I just use about 4 large chicken breasts because I hate deboning chickens. HAHA)
3 Cups egg noodles

Combine above ingredients EXCEPT NOODLES in a slow cooker with the chicken on top.  Cook on low for 4-8 hours or high 2-4.

Remove chicken and bay leaves.  Add 3 cups egg noodles uncooked to the slow cooker and cover with lid and cook for 20 more minutes.  While the noodles cook shred the chicken.  Add back in and serve.

Kitchen Sink Cookies


3/4 cup butter utter softened
1/3 cup shortening
1 cup sugar
2/3 cup brown sugar
2 large eggs
2 tsp vanilla
2 cups flour
2/3 cup cocoa powder
1 tsp baking soda
1/4 tsp salt
1 cup mini m&m's
1 cup white chocolate chips
1 cup crushed oreos
1/2 cup reese's mini cups (halfed)

Beat butter and shortening at medium speed until creamy.  Gradually add sugar until light and fluffy.
Add eggs one at a time and vanilla.
Gradually add flour, cocoa, soda and salt.  Beat until blended.
Add remaining ingredients and gently blend.

Chill dough for 30 min

Bake at 350 for 10 min.
